Bovolo
Bovolo is a salumeria, gelateria, enoteca, & pozzeria. Bolovo is the Italian word for a type of snail, the symbol of the SLOWFOOD movement, Italy’s response to the arrival of a McDonald’s at the bottom of the Spanish Steps in Rome. It is a movement to get people back to growing their own food, making foods by hand, and eating together. The food at Bovolo is all made with that intention, “slow food fast.” John Stewart cures all his own salumi and bacon and makes his won hand crafted gelati.
